Meatloaf with Savory Gravy

INGREDIENTS 

For the meatloaf:

1 1/2 lbs ground beef or turkey 1/2 cup Thrive Fields Cassava Flour (2 oz, 1/8 of 16 oz pack) 1/2 cup onion, finely diced

2 garlic cloves, minced 2 eggs

1/4 cup ketchup or tomato paste 1 tsp salt

1/2 tsp black pepper 1/2 tsp dried thyme

For the gravy:

2 cups beef or veggie broth

2 Tbsp Thrive Field Cassava Flour (0.8 oz, 1/20 of pack)

2 Tbsp oil or butter Salt and pepper

DIRECTION

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the ground meat, cassava flour, chopped onion, minced garlic, eggs, ketchup, and spices. Mix until well incorporated.

  3. Shape the mixture into a loaf and place it in a greased loaf pan.

  4. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).Gravy

  5. Heat oil in a saucepan. Stir in cassava flour to form a roux, cook for 1 minute. Slowly whisk in broth. Simmer until thickened (5–7 minutes). Season to taste.
