Vanilla Mug Cake

INGREDIENTS

1/4 cup Thrive Fields Cassava Flour (1 oz, 1/16 of a 16 oz pack)

2 Tbsp coconut sugar

1/4 tsp baking powder Pinch of salt

1/4 cup non-dairy milk or regular milk

1 Tbsp melted coconut oil or butter

1/4 tsp vanilla extract

DIRECTIONS

  1. Prepare mug

  2. Lightly grease a microwave-safe mug with oil or butter.

  3. In the mug, stir together cassava flour, coconut sugar, baking powder, and salt.

  4. Add milk, melted coconut oil, and vanilla. Stir until smooth and no lumps remain.

  5. Microwave on high for 60–75 seconds, until the cake rises and is firm to the touch but still moist.

  6. Let cool for 2 minutes before eating. Top with whipped coconut cream or berries if desired
