Spiced Cheese Puffs

INGREDIENTS 

1 cup Thrive Fields Cassava Flour (4 oz, 1/4 of a 16 oz pack)

1/2 cup milk (dairy or unsweetened non-dairy)

1/4 cup olive oil

1 egg

3/4 cup grated parmesan or sharp cheddar

1/4 tsp smoked paprika 

1/4 tsp salt

DIRECTION

  1. Preheat oven to 375 °F (190 °C). Grease or line a mini muffin tin.:

  2. In a small saucepan, combine milk and oil. Heat until just steaming (don’t boil). Remove from heat.

  3. In a mixing bowl, whisk cassava flour with smoked paprika and salt.

  4. Pour warm milk mixture over the flour. Stir with a wooden spoon until smooth—it will be sticky. Let cool for 5 minutes.

  5. Stir in the egg and then the cheese. Mix until a stretchy, tacky dough forms.

  6. Spoon into muffin tin:

  7. Fill each cup about 2/3 full with the dough.

  8. Bake for 18–22 minutes, until puffed and golden on top.

  9. Best served hot or warm—cheesy and satisfying!
