Falafel Wraps

INGREDIENTS

For falafel:

1 1/2 cups canned chickpeas, drained

1/4 cup Thrive Fields Cassava Flour (1 oz, 1/16 of 16 oz pack)

2 cloves garlic

1/4 cup chopped parsley

1 tsp cumin

Salt and pepper

2 Tbsp olive oil (for pan-frying) Optional for serving:

Cassava wraps or lettuce leaves

Tahini sauce

Cucumber and tomato slices

DIRECTION

  1. In a food processor, pulse chickpeas, garlic, parsley, and cumin until crumbly. Mix in cassava flour, salt, and pepper.

  2. Shape into small patties or balls. Chill 10 min.

  3. Heat oil in skillet over medium. Cook falafel 3–4 min per side until golden.

  4. Wrap in lettuce or cassava flatbread with tahini, cucumber, and tomato.
