Dumplings for Soup


INGREDIENTS

1/2 tsp dried parsley (optional)

1 large egg

1/3 cup non-dairy or regular milk

1 Tbsp olive oil

 

DIRECTION

  1. In a bowl, mix cassava flour, baking powder, salt, and parsley.

  2. Beat in the egg, milk, and oil until a thick, sticky batter forms.

  3. Drop small spoonfuls of batter into gently simmering soup or stew.

  4. Cover and simmer for 10–12 minutes. Do not lift the lid during cooking to ensure dumplings puff properly.

  5. Fluffy dumplings ready to soak up every spoonful!
