Coconut Macaroons

INGREDIENTS 

2 cups shredded unsweetened coconut 1/4 cup Thrive Fields

Cassava Flour (1 oz, 1/16 of a 16 oz pack)

1/2 cup maple syrup or honey

1 tsp vanilla extract Pinch of salt

DIRECTION

  1. Preheat oven to 325 °F (165 °C). Line a baking sheet with parchment paper.

  2. In a bowl, combine coconut, cassava flour, maple syrup, vanilla, and salt. Stir until evenly moistened.

  3. Scoop tablespoon-sized mounds onto the baking sheet, spacing them apart slightly.

  4. Bake for 18–20 minutes until the tops are golden. Allow macaroons to cool completely before removing from the tray.
