
Classic Flour Brownies

INGREDIENTS
3/4 cup Thrive Fields Cassava Flour (3 oz, 3/16 of a 16 oz pack)
1/2 cup cocoa powder (unsweetened)
1 cup coconut sugar or regular sugar
1/2 cup melted coconut oil or butter
2 large eggs
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
DIRECTION
- Preheat the oven to 350 °F (175 °C). Line an 8x8-inch pan with parchment paper.
- In a large bowl, whisk melted coconut oil (or butter) and sugar together until glossy.
- Add eggs and vanilla extract. Whisk vigorously for 1–2 minutes until slightly thickened.
- In another bowl, combine cassava flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet, stirring until just combined. Don't overmix.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 22–26 minutes, until a toothpick inserted into the center comes out with moist crumbs.
- Let cool completely before slicing into squares. Brownies firm up as they cool.
