Classic Flour Brownies

INGREDIENTS

3/4 cup Thrive Fields Cassava Flour (3 oz, 3/16 of a 16 oz pack)

1/2 cup cocoa powder (unsweetened)

1 cup coconut sugar or regular sugar

1/2 cup melted coconut oil or butter

2 large eggs

1 tsp vanilla extract

1/2 tsp baking powder 

1/4 tsp salt

DIRECTION

  1. Preheat the oven to 350 °F (175 °C). Line an 8x8-inch pan with parchment paper.
  2. In a large bowl, whisk melted coconut oil (or butter) and sugar together until glossy.
  3. Add eggs and vanilla extract. Whisk vigorously for 1–2 minutes until slightly thickened.
  4. In another bowl, combine cassava flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet, stirring until just combined. Don't overmix.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 22–26 minutes, until a toothpick inserted into the center comes out with moist crumbs.
  7. Let cool completely before slicing into squares. Brownies firm up as they cool.
