Cheesecake Bars

INGREDIENTS 

For the crust:

1 cup Thrive Fields Cassava Flour (4 oz, 1/4 of a 16 oz pack)

1/4 cup coconut sugar

1/3 cup melted butter or coconut oil

1/2 tsp vanilla extract

Pinch of salt

For the filling:

16 oz (2 blocks) cream cheese, softened

1/2 cup sugar

2 large eggs

1 tsp vanilla extract

DIRECTION

  1. Preheat oven to 325 °F (165 °C). Line an 8x8- inch pan with parchment paper.

  2. In a bowl, combine cassava flour, coconut sugar, salt, melted butter, and vanilla. Mix until crumbly.

  1. Press mixture firmly into the bottom of the pan. Bake for 10 minutes, then cool slightly.

  2. Beat cream cheese and sugar together until smooth. Add eggs one at a time, beating well after each. Stir in vanilla.

  3. Pour filling over the baked crust. Smooth the top.

  4. Bake for 25–30 minutes, until the center is just set but still slightly jiggly.

  5. Let bars cool completely, then refrigerate for at least 3 hours before slicing.
