Banana Muffin Bites

INGREDIENTS

(MAKES 12 MINI MUFFINS)

1/2 cup mashed ripe banana (1 large)

1/2 cup Thrive Fields Cassava Flour (2 oz, 1/8 of a 16 oz pack)

1 egg

1 Tbsp maple syrup or honey 2 Tbsp coconut oil, melted 1/2 tsp baking soda

1/2 tsp vanilla Pinch of salt

Optional: mini chocolate chips or chopped nuts

DIRECTION

  1. In a bowl, whisk banana, egg, maple syrup, oil, and vanilla.

  2. Stir in cassava flour, baking soda, and salt until combined. Fold in optional add-ins if using.

  3. Divide batter into a greased or lined mini muffin pan. Bake at 350 °F (175 °C) for 12–15 minutes, until a toothpick comes out clean.

  4. Let cool before removing. Store in fridge for up to 4 days or freeze for longer.
