Banana Cake

INGREDIENTS 

1 1/2 cups Thrive Fields Cassava Flour (6 oz, 3/8 of a 16 oz pack)

1 tsp baking soda 1/2 tsp cinnamon 1/4 tsp salt

3 ripe bananas, mashed 1/3 cup maple syrup or honey

1/4 cup melted coconut oil or butter

2 large eggs

1 tsp vanilla extract

DIRECTION

  1. Preheat oven to 350 °F (175 °C). Grease an 8x8-inch baking pan.

  2. In a bowl, whisk cassava flour, baking soda, cinnamon, and salt.

  3. In another bowl, mash bananas. Stir in maple syrup, melted oil, eggs, and vanilla until smooth.

  4. Add dry ingredients to the wet, stirring gently until just combined.

  5. Pour into the prepared pan and spread evenly. Bake for 30– 35 minutes, or until a toothpick comes out clean.

  6. Let cool before slicing. Top with dairy-free frosting if desired!
