Baked Chocolate Donuts

INGREDIENTS (MAKES 8 DONUTS)

1 cup Thrive Fields Cassava Flour (4 oz, 1/4 of a 16 oz pack)

1/2 cup cocoa powder 

1/4 cup melted coconut oil or butter

1 tsp vanilla extract

For optional glaze:

1/2 cup chocolate chips melted with 1 Tbsp coconut oil

DIRECTION

  1. Preheat oven to 350 °F (175 °C). Lightly grease a donut pan.

  2. In a large bowl, whisk together cassava flour, cocoa powder, coconut sugar, baking powder, and salt.

  3. In another bowl, whisk eggs, milk, melted coconut oil, and vanilla until well combined.

  4. Add the wet ingredients to the dry ingredients and stir until a smooth, thick batter forms.

  5. Spoon batter into the donut pan, filling each cavity about 2/3 full.

  6. Bake for 14–16 minutes, or until donuts spring back lightly when touched.

  7. Let cool in the pan 5 minutes, then transfer to a rack. Drizzle with melted chocolate if desired.
